Tangy, refreshing homemade black currant popsicles bursting with bold flavor and perfectly sweetened for summer cooling.

# Components:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened, fresh or bottled
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Preparation steps:

01 - Combine blackcurrant juice and sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not bring to a boil.
02 - Remove saucepan from heat and stir in fresh lemon juice. Allow the mixture to cool to room temperature before proceeding.
03 - If using whole blackcurrants, divide them evenly among the popsicle molds.
04 - Pour the cooled blackcurrant mixture into the popsicle molds, leaving approximately 1/4 inch space at the top for expansion during freezing.
05 - Insert popsicle sticks into the center of each mold. Freeze for a minimum of 4 hours, or until completely set and firm.
06 - To remove popsicles from molds, briefly run the exterior of the molds under warm running water and gently pull out each popsicle by the stick.

# Expert Advice:

01 -
  • They taste like summer tastes, with that honest blackcurrant tang that makes your mouth wake up.
  • No fussy techniques or obscure ingredients—just juice, sugar, lemon, and time in the freezer.
  • Vegan and gluten-free naturally, so you can hand them out without checking dietary boxes.
02 -
  • Don't skip the cooling step or you'll end up with melted edges and uneven texture, which I learned the hard way on my first attempt.
  • That brief warm-water trick for unmolding is everything—it's the difference between a clean popsicle and one that cracks or tears as you pull it out.
03 -
  • Keep your popsicle molds in a shallow container while freezing so the sticks don't stick to each other and break off when you try to separate them.
  • If you can't find blackcurrant juice where you live, order it online or check specialty grocery stores—it's worth seeking out because nothing else tastes quite like it.
