- Preheat oven to 475°F. Position pizza stone in oven while heating if using.
- In a small saucepan over medium heat, melt unsalted butter. Add minced garlic, cook for 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in 1/2 cup grated Parmesan cheese, season with salt and pepper. Allow to simmer 2–3 minutes or until slightly thickened. Remove from heat.
- On a floured surface, roll pizza dough into a 12-inch circle. Transfer to a parchment-lined baking sheet or pizza peel.
- Spread prepared Alfredo sauce evenly over dough, leaving a 1/2-inch border around edges.
- Top with shredded mozzarella cheese, cooked chicken breast, optional spinach leaves and red onion, then evenly sprinkle 1/4 cup grated Parmesan cheese.
- Bake in preheated oven for 12–15 minutes until the crust is golden and the cheese is melted and bubbling with slight browning.
- Remove pizza from oven, garnish with chopped fresh parsley, cut into slices, and serve hot.
