# Preparation steps:

01 - Boil rotini pasta in salted water until al dente, then drain and rinse with cold water. Set aside.

03 - Cook bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble once cooled.
04 - Whisk together mayonnaise, Parmesan, lemon juice, Dijon mustard, Worcestershire sauce, anchovies (if using), garlic, and black pepper. Gradually add milk until desired consistency is reached.
05 - In a large bowl, combine cooked pasta, grilled chicken, bacon bits, cherry tomatoes, romaine, and red onion if using.
06 - Pour Caesar dressing over the salad and toss until all ingredients are evenly coated.
07 - Top salad with shaved Parmesan, croutons, and freshly ground black pepper. Serve chilled or at room temperature.

# Expert Advice:

01 -
  • It comes together in 40 minutes and tastes even better the next day when flavors deepen.
  • One bowl holds everything you need for a full, satisfying meal without feeling heavy.
  • The creamy Caesar coating means no dry, sad pasta salad situation ever again.
02 -
  • Don't dress the salad more than 2 hours ahead or the lettuce and croutons will get soggy and sad.
  • The anchovies are non-negotiable if you want it to taste like actual Caesar salad; without them it's just creamy pasta.
03 -
  • Keep the pasta, chicken, and dressing completely separate until you're ready to serve so nothing gets soggy or overworked.
  • If you're making this a few hours ahead, assemble it just before serving and add the croutons and shaved Parmesan right at the end so they stay crispy.
