# Preparation steps:
01 - Preheat the oven to 450°F and line a baking sheet with parchment paper; set aside.
02 - Carefully separate the egg whites from the yolks, placing each yolk into its own small bowl and transferring whites to a clean mixing bowl; reserve yolks whole.
03 - Using an electric mixer on high speed (or a vigorous whisk), beat the egg whites until stiff peaks form and the whites hold shape.
04 - Gently fold the salt, pepper and any chosen optional cheese or herbs into the whipped whites, keeping as much air as possible.
05 - Spoon the whipped whites onto the prepared sheet into two even mounds and use the back of the spoon to create a deep well in the center of each mound.
06 - Bake the mounds for 3 minutes until the surface begins to color lightly, then remove the sheet from the oven.
07 - Carefully place one reserved yolk into the center well of each cloud and return to the oven for an additional 3 to 5 minutes, baking until the yolk is just set but still slightly runny.
08 - Transfer the clouds to plates and garnish with extra herbs if desired; serve at once, optionally on toast or alongside a salad.
