03 - In a mixing bowl, combine ricotta cheese, extra-virgin olive oil, minced garlic, kosher salt, and black pepper until smooth.
04 - Evenly spread ricotta mixture over dough, leaving a 1/2-inch border around the edges.
05 - Top with shredded mozzarella, grated Parmesan, and provolone cheese if using.
06 - Sprinkle dried oregano and freshly ground black pepper over cheeses.
07 - Transfer pizza to oven and bake for 12 to 15 minutes, until crust is golden and cheese is bubbling and lightly browned.
08 - Remove pizza from oven. Top with torn basil leaves and chopped fresh chives if desired. Slice and serve immediately.
