07 - ½ cup baby spinach, chopped

# Preparation steps:
01 - In a small bowl, whisk eggs with salt and pepper. Cook in a nonstick skillet over medium heat, stirring gently until just set. Remove from heat.
02 - Lay one tortilla flat and make a single cut from the center to the edge, creating a radius.
03 - Mentally divide the tortilla into four quarters. Place scrambled eggs in the first quarter, bacon on the second, cheese on the third, and spinach, diced tomato, and avocado in the fourth quarter.
