01 - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil. Pat the salmon fillets completely dry using paper towels. Season both sides generously with kosher salt and freshly ground black pepper. Arrange the seasoned fillets on the prepared baking sheet.
02 - In a small saucepan, combine the low-sodium soy sauce, honey, freshly grated ginger, sesame oil, rice vinegar, minced garlic, and red pepper flakes (if using). Place the saucepan over medium heat and bring the mixture to a gentle simmer.
03 - In a separate small bowl, whisk together the water and cornstarch until a smooth slurry forms. Gradually stir this slurry into the simmering glaze in the saucepan. Continue to cook, stirring constantly, for approximately 1 to 2 minutes until the glaze has thickened to your desired consistency. Remove from heat.
04 - Brush approximately half of the thickened glaze evenly over the surface of the salmon fillets. Place the baking sheet into the preheated oven and roast the salmon for 10 to 12 minutes, or until the fish is cooked through and flakes easily with a fork.
05 - Switch your oven setting to the broiler function. Brush the remaining glaze over the salmon fillets. Broil for 1 to 2 minutes, carefully watching to ensure the glaze bubbles and caramelizes without burning.
06 - Carefully transfer the glazed salmon fillets to serving plates. Garnish with sliced green onions, toasted sesame seeds, and lime wedges, if desired.
