Memorial Day No-Bake Icebox Cake (Printable Version)

Chilled layers of graham crackers, whipped cream and fresh strawberries for an easy, festive summer dessert.

# Components:

→ Dairy & Cream

01 - 2 cups cold heavy whipping cream
02 - 1/4 cup powdered sugar
03 - 1 teaspoon pure vanilla extract

→ Cookies & Base

04 - 1 (14-ounce) box graham crackers

→ Fruit

05 - 1 1/2 pounds fresh strawberries, hulled and sliced

→ Optional Garnish

06 - 1/4 cup blueberries
07 - Fresh mint leaves

# Preparation steps:

01 - Chill the mixing bowl and beaters briefly, then combine cold heavy whipping cream, powdered sugar and vanilla in the bowl; whip on medium-high speed until stiff peaks form and the mixture holds shape.
02 - Spread a thin, even layer of whipped cream across the bottom of a 9x13-inch baking dish to prevent crackers from sliding.
03 - Lay graham crackers in a single layer over the cream, breaking pieces as necessary to cover the surface without large gaps.
04 - Dollop and gently spread one-third of the remaining whipped cream over the crackers, then scatter one-third of the sliced strawberries in an even layer.
05 - Repeat the sequence twice more — crackers, whipped cream, strawberries — finishing with a final layer of whipped cream and arranged strawberries on top for an even, decorated surface.
06 - For a festive presentation, scatter blueberries and tuck fresh mint leaves among the top strawberries as desired.
07 - Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the layers to soften and the structure to set for clean slicing.
08 - Use a sharp knife to slice chilled portions, wiping the blade between cuts for neat layers; serve chilled.

# Expert Advice:

01 -
  • Layering everything takes minutes, so you still have time to enjoy your guests and maybe that chilled rosé.
  • The longer this cake sits in the fridge, the more luscious and sliceable it becomes—honestly, leftovers have never lived to see a second day at my place.
02 -
  • Once, I tried to rush chilling and ended up with crunchy crackers and slippery layers—patience here is absolutely key.
  • Using just-washed berries without drying led to watery cream, so now I always pat them thoroughly before layering.
03 -
  • If your whipped cream starts to look grainy, stop immediately and use it—over-whipping can break the texture.
  • Lining the pan with parchment makes serving tidy squares a breeze.
