Probiotic Soda Citrus Mocktail (Printable Version)

# Components:

→ Probiotic Base

01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

→ Flavoring

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes

# Preparation steps:

01 - In a clean glass jar, dissolve organic cane sugar in filtered water. Add water kefir grains or ginger bug along with fresh lemon juice. Stir gently using a non-metallic spoon.
02 - Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Allow to ferment at room temperature (68–77°F) for 24 to 48 hours until lightly sparkling and tangy.
03 - Remove and strain out water kefir grains or ginger bug with a fine mesh strainer. Reserve or discard the culture as desired.
04 - In a pitcher, combine the strained probiotic soda base, fresh orange juice, lime juice, and mint leaves. Stir gently to meld flavors.
05 - Fill serving glasses with ice cubes. Pour mocktail mixture over ice and garnish with thin orange slices and extra mint if desired.
06 - Serve straight away to preserve effervescence and freshness.
