# Preparation steps:
01 - Preheat oven to 350°F and line a baking sheet with parchment paper.
02 - Whisk together flour, baking powder, and salt in a small bowl; set aside.
03 - In a larger bowl, beat softened butter with sugar until light and fluffy.
04 - Add egg, milk, and vanilla extract to the butter mixture and mix until combined.
05 - Gradually stir the dry ingredient mixture into the wet until just combined.
06 - Using a teaspoon or small scoop, drop dough mounds onto the baking sheet 2 inches apart.
07 - Bake for 12 to 15 minutes until edges turn lightly golden; cool on the sheet 5 minutes, then transfer to wire rack.
08 - In a microwave-safe bowl, melt chopped chocolate and optional coconut oil in 20-second intervals, stirring until smooth.
09 - Dip half of each cooled vanilla wafer into the melted chocolate; let excess drip off, then place on parchment paper to set. Chill for 10 minutes if desired.
